Why not just reduce the game to hit a button, then the game makes a random calculation and one of the teams lose...?
If you remove the healing, what would monks do? What would Divine Favor do?
Healing is a basis of most RPG games. Removing it would be like removing weapons or armor or skills.

Okay, Mylon, let me get this straight.
You said when you watch the guild battles, they tend to be long and boring right?
Well, If you haven't noticed, you're watching the "top guild battles", which therefore means you're watching people who have diligently "practiced" Guild Wars as a religion. You're not watching any random dude out there, you're watching a person who has done lots of practice. The slightest drop in health can signal they're healing craze off.
Then there are other battles with okay monks. Those battles can either last forever because the monks aren't healing very well and everybody dies, or since the monks aren't that great, the whole team goes into the "turtle shell" as said before.
Also self heals are extremely crucial to both PvP and PvE. If self heals are taken out of PvE, there'll be a lot of hate messages towards ANET. If taken out of PvP, well, a lot of hate messages still but extremely difficult on the monks. Also in Random Arenas, if one side has a healing monk the battle is totally one sided. One team can "heal" the other team is shafted.
Mylon, you also say Monks can make a team "invincible". (cough) Mesmers, Assassins, and SPIKES!(end cough).
But yeah, this thread is "flame-bait" as some people like to call it, also this'll probably never happen.

4 me/n speced anti caster
4 N/me speced anti melee
GG all other builds.
Removing monks would be fun for maybe a day or two as a joke event, but once everyone figures out what meta is like without monks it will be goodbye balance and hello fail wars.
